Since the weather decided not to cooperate and it has been pouring raining since 3 pm, I had to improvise and prepared the chicken breasts in my cast iron skillet. I seasoned them with a new spice mix from McCormick called Fiesta Citrus and low sodium soy sauce. Salad tonight was a wedge salad with homemade creamy garlic dressing. Fresh cucumbers, tomatoes and peppers from the garden, some green olives and turkey bacon bits to top it. Yummy. New favorite salad. Sides were fresh corn on the cob, coleslaw, sliced beets and steamed wax beans. Fresh Red Zinger ice tea and dinner was complete.
