The veggie garden is in full production so tonight for dinner we’re having stuffed squash boats, tender baby wax beans, a tossed garden salad and watermelon cubes. All paired with a big glass of homemade red wine. Here’s the squash boats simmering along on the stove. Will add a sprinkle of grated Asiago before serving.
These are stuffed with ground turkey breast and simmered on a bed of onions and green peppers and a healthy dose of minced garlic.
Dessert is Belgium chocolate Gelato with homemade blueberry sauce. Yummo!!
